The apples around at the moment are delicious – a great companion to Jane and Mark Cooper’s fantastic pork 

Serves 4. Recipe from Cooking Outside the Box by Abel & Cole

6 English apples of your choice
A few slices of ginger (optional)
1 tbsp sugar
2 tbsp cider vinegar
2 tbsp water
Juice of half a lemon
1 sprig of rosemary, stalk removed
Handful of sultanas (optional)
1 tbsp butter
4 thick cut pork loin chops
Salt & freshly ground black pepper
Preheat the oven to 190 C/ 375F/ gas 5
Peel, core and slice the apples and place them in a shallow baking dish. Add the ginger if using.
In a separate bowl, mix together the sugar, vinegar, water, lemon juice, rosemary and sultanas, if using and sprinkle over the apples. Cut the butter up and place it around the top of the apples.
Season the chops with salt and pepper and place them on top of the apples. Bake covered on the middle shelf of the oven for 30-40 minutes, or until the chops are cooked through.
